Cocktail S’mores Treats

Your friends at Fossil Creek enjoy creating delicious cocktails for your holidays and events. But, sometimes it’s just as fun to infuse our cocktails into our desserts for some extra flavor. Try Fossil Creek’s signature Cocktail S’mores for a delicious adult twist on this classic campfire treat. Since these treats do require baking you will have to make these prior to the camping trip, but they are worth the extra effort. Don’t believe us? Bake some today and see for yourself!

2 2/3 cups flour
1 ½ cups graham cracker crumbs
2 tsp baking powder
1 tsp baking soda (leave out for a more crispy treat)
1 tsp salt (kosher)
1 cup unsalted butter, softened
¾ cup granulated sugar
¾ cup dark brown sugar
2 eggs
2 tsp vanilla bean paste (or pure extract)
2 tbsp Kahlua
2 tbsp Baileys Irish Cream
7-8 Hershey bars, 16 oz (milk or special dark, regular or 4XL bars)
6 cups miniature marshmallows
2-3 tbsp Tullamore D.E.W. Irish whiskey


  1. Preheat oven to 350F. Generously grease or spray pan with a non-stick spray.
  2. In a medium bowl, combine the flour, graham cracker crumbs, baking powder, baking soda and salt. Set aside.
  3. In the bowl of a stand mixer, cream the butter and sugars. Beat on medium until light and fluffy for about 3 minutes.
  4. Add the eggs, one at a time, beating with each addition. Add the vanilla, Kahlua and Baileys. Beat to combine.
  5. With the mixer on the lowest speed, gradually add the flour mixture. Mix until just combined and finish by hand.
  6. Press ½ the dough in the bottom of the prepared pan. Bake for 15-18 minutes or until lightly brown. Remove from the oven.
  7. Arrange a single layer of the Hershey bars over the bottom layer, breaking the bars as needed. Sprinkle the mini marshmallows over the chocolate bars.
  8. Gently scatter the remaining batter over the marshmallows with a cobble stone effect. Sprinkle the Irish Whiskey over the batter.
  9. Bake for 20-25 minutes until the top layer is lightly browned and just a bit of marshmallow is oozing out of the top. Cool completely on a wire rack. Cut into bars.
